Chereau Carre
The 25 hectare vineyard is planted exclusively with Melon de Bourgogne. More than half of the vines were planted forty years ago and one area has one hundred year old vines. The harvest is carried out when the grapes are mature and more than half of the vineyard is hand-picked. The wine making is exclusively on the lees mainly in stainless vats. The maturing on the lees and the technique of “batonnage” brings more complex fruit to the wine. It is bottled at the Château in the Spring.
