Though Cyriaque is within the boundaries of the appellation Pic St-Loup, the lion's share of his production is Cabernet Sauvignon, a grape varietal that is outside of the constraints set for the A.O.C. in the Languedoc. This means that in lieu of getting an A.O.C. cru status, he must take a Vin de Pays d'Oc designation. The trade-off for Cyriaque is that he gets to make his wines his way, and we, in turn, get an incredible price-a mutually beneficial trade-off. Being rebellious seems to come naturally to a man of such innate talent, and the elegance of his wines are proof enough in a region where bigger is often considered better. Make no mistake, raw terroir and spicy garrigue abound in these wines, with rich, juicy fruit and silky tannins.

But a substantial portion of his acreage is in Cabernet Sauvignon, and even his wine from young vines representing old selections massales of Syrah, Grenache, Mourvedre, Carignan and Cinsault (some from famous sources) will not qualify for Pic St.-Loup appellation until the 2011 vintage, meantime relying on the recently-created super-umbrella appellation to be sold as simply 2010 Languedoc. Matured in cement tank and demi-muid and tasted with Claude Gros who is advising on the project, this testifies not only to Rozier's quality-consciousness but also to the distinct virtues of its vintage, displaying infectiously, almost explosively fresh, juicy ripe black fruits complimented by rich red-meat stock and liberally laced with saliva-inducing salt, along with resin, brown spices. It finishes with real verve, promising a wine worth following for at least half a dozen years after it is bottled late this year.
