The Dei family produced their first wines from their estate in the heart of the historic appellation of Vino Nobile di Montepulciano in 1985. Now run by Caterina Dei, the estate has become one of the leaders in the region, producing lush, perfumed, fruit-driven wines that are exquisite expressions of the local Prugnolo clone of Sangiovese, blended with small amounts of Canaiolo and Mammolo. The vineyards, on the slopes below the picturesque town of Montepulciano, extend over 36 hectares (88 acres) and are divided mainly between the crus of Martiena and Bossona. All of the Dei wines are fermented in stainless steel tanks and aged in large oak Botte. Pest control treatments are used as little as possible. Only organic fertilizers are used and only very low dosages of SO2 are added to the wines. A new cellar is being built following the guidelines of ecologically compatible architecture. Energy will be provided by photovoltaic solar panels. Following fermentation this wine is aged for 24 months in Slavonian oak barrels followed by 6 months in bottle before release.
