In the early 1960's, Laura and Fabrizio Bianchi produced their first vintage of Chianti from Castello di Monsanto. They were considered very avant garde in this time because of their new ideas. For example, in 1968 Fabrizio decided to modify the blend of his Chianti Classico by eliminating the white Trebbiano and Malvasia grapes and use solely Sangiovese, Canaiolo and Colorino. In addition, the old wooden vats at the winery just didn't satisfy his quality standards so he purchased 12 water cooled stainless steel tanks, an absolute novelty. Then he decided to age the wine in high capacity Slavonian oak barrels instead of the usual chestnut wood casks. His piece de resistance was the construction of a new 820 foot barrique cellar. Three men worked for 6 long years to build the cellar in accordance with medieval techniques; it is totally lined with natural stones. It's design is based on the ancient Etruscan arch. This unique masterpiece can hold 1500 225 liter capacity barrels.
