 Martiniano Palomero Saez is a professional hotelier, who has dedicated his life to his passion: restaurants, 22 of which can be found throughout Spain. A few years ago, Mr Palomero Saez entered the wine world through his purchase of an interest in the Bodegas Riberalta, located in Gumiel de Izan. Since then, he has begun his most ambitious project, Uvaguilera. Under the guidance of master winemaker Isaac Fernandez, the estate's objective is to create ultra-premium, world-class wines. In March 2002, the estate opened its new modern facilities. The winery design utilizes gravity (no pumps) for all stages of vinification. The La Nava vineyard, where the grapes for this wine are sourced features a considerable difference between day and night temperatures which enhances complexity. The grapes are harvested by hand at optimum ripeness. The vines here average 80 years old and have very low yields that improves concentration. The grapes from different plots in the vineyard are fermented separately in small stainless steel vats and aged separately until the final blending. The oak is composed of 100% new French oak barrels. This wine was aged for a total of 23 months with no filtration or clarification.
