The Semillon grape was always considered a bit one dimensional and mediocre by itself so it was often blended with other white wine grapes to produce some pretty amazing wines. However, it has been used by itself in some of the newer grape growing regions like Australia to make dessert wines with great success. In France it is blended with Sauvignon Blanc to produce the superb Sauternes dessert wines which benefit from being infected by the mold called Botrytis Cinerea that shrivels the grapes concentration sugar and acidity. It is also in the mix in various dry white Bordeaux which often have great aging ability. The Australian dessert wines are solely Semillon and also infected with Botrytis like Sauternes and many of them are excellent.
