The Cabernet Franc grape is similar in flavor to Cabernet Sauvignon but with less tannin and acidity. In France it is used primarily in Bordeaux to blend with Cabernet Sauvignon with one exception, Chateau Cheval Blanc which is made with some of the best Cabernet Franc grapes and Merlot. Also, in the village of Chinon in the Loire Valley some exceptional wines are made using Cabernet Franc with a bit of Cabernet Sauvignon.
