"The fruit was sourced from five small blocks in the Barossa all cropped at about 1.5 tonne to the acre. The wine showed masses of intense plums and spices from nose through to the palate. Hence we chose to use a combination of new and one year old French oak to stiffen the tannic structures and add complexity to the wine. Aged for 18 months in barrel, the resultant wine is balanced and elegant with hints of some great oak, but dominated by the natural borossan fruit weight. The nose is heady with liquorice and spices which flow through to the palate with soft mouth feel." -Bruce Clugston, Gotham
